Your question is a bit unspecific. Do you mean a single Vim window stretched to span multiple monitors? Or do you mean multiple Vim windows running from a single Vim process? Note that by "window", I am referring to GUI application windows, not Vim's internal "split windows".
In the first case, that is entirely up to your OS or window manager to handle. In the second case, no, I don't believe that is possible. One instance of Vim equals one application window.
