If I have something stored in a specific register say register z
and select something visual then I try to paste over it with "zp

Unless I am totally missing something "zp won't replace what is in
that register. "zyy or "zY would do that.

The OP said that they already have the contents in the register. So I assumed they had already done something like

  "zY

to populate the register, then selected something using v/V/^V and then used

 "zp

to paste over the the visual selection with the contents of the "z" register.

That's the way it's supposed to work, so if the OP isn't seeing that behavior, something is likely interfering.
