In terms of functionality, not much.

The keyboard is a Model No. M0116 keyboard; the mouse is an Apple Desktop Bus 
Mouse (Model No. A9M0331).  Just about any ADB-compatible mouse and keyboard 
will work with the SE/30, however.  

In the interests of getting the machine up and running, it'd be a good idea to 
go with whatever Doug McNutt is offering.  Later on, after you've played with 
it for awhile and have perhaps decided to keep it after all, you may want to 
take a look around for the stock keyboard and mouse.  The mice are fairly easy 
to find, as today's optical mice are (generally) better than Apple's old 
electromechanical ones.  

The stock keyboard is still fairly common, but somewhat harder to find than the 
mouse.  Possibly because keyboards, unlike mice, have largely taken a turn for 
the worse.  And at least a few people who have M0116s in their hands are 
reluctant to part with them.  The keyboard's small footprint and super-reliable 
Alps keyswitches make it a keyboard that it's possible (even desirable) to use 
with newer hardware well into the 21st Century.

If you end up keeping the SE/30 around for use as a word processor, that's when 
it might be worth your while to spend some time looking around at the different 
mouse/keyboard options available.  I'm guessing Doug McNutt may offer to send 
you an Apple Extended Keyboard of some kind, and that's about as good as it 
gets in terms of typing with an old-school Apple keyboard.
