One conversion that's been done is a 9" color or greyscale VGA POS (Point Of 
Sale) terminal monitor. Such monitors (without cases) used to be common and 
dirt cheap as surplus. They require little, if any trimming of the original CRT 
bezel to fit and when turned off look pretty much exactly like the original.

More up to date is a small LCD, but to make it look good you have to trim the 
case so the bezel sits flat against the screen and to keep any of the image 
from being hidden behind the bezel you need to trim it rather than resizing the 
image like you can on a CRT. The big bonus with an LCD is there's a huge amount 
of extra room inside the case.
