I didn't see anyone here mention it, but if you run both System 6 and System 7 on your old mac, it's a good idea to install the old "desktop manager" extension in your System 6 folder so that the desktop doesn't have to be rebuilt every time you switch back to System 7. You'll have to search around for it as it is no longer at Gamba's site. I think there was another extension that did the same thing called "Desktop Secretary".
The best way to switch between System 6 and System 7 folders is to use "System Switcher" or "System Picker" like people noted above. I keep several System Folders on my old macs. You can name each System folder whatever you want, but I use descriptive terms like "System 7.1 Folder", etc. I have never had any problems or issues keeping multiple System folders on my old macs.
