I'm not 100% sure on this

But you need to check if the VRAM SIMM has been upgraded or if it is the
256k original unit.
There was an option to upgrade the video RAM in these to 512k when they were
new.

What sort of monitor are you using?

the Apple 14" monitor that usually shipped with these produced 256 colours.
