Along the same idea, I started gathering a 68k software spec list a while back of Apple and third party upgrades, many that work well on 7.1. It's not complete as far as version numbers, dates and sizes, but it's very useable and updateable.
As far as specific extensions that can operate in 7.1, I know of a few of them as well that could be included within my old list.
