HFS is the standard Macintosh format. ISO was one of
the first two competing formats for data CD-ROMs.
The other was the High Sierra format which was
essentially absorbed into the ISO format. The result
wa named ISO 9660. That's the format used by most
PC data CD-ROMs. Joliet is Microsoft's CD-ROM format
for storing filenames longer than the 8.3 character
DOS standard. A Joliet CD-ROM may or may not also
be ISO 9660 compliant. If not, a PC running just
DOS/Windows 3.x can't read it.

Hybrid CD-ROMs combine two or more of the formats.
The Joliet/ISO combo is usually not called a hybrid
but it is. If you make a HFS/Joliet/ISO hybrid CD
then it's readable by any Mac or PC.

P.S. The High Sierra format was named after the
High Sierra Hotel at Lake Tahoe because that's
where the group that created the format held their
meetings. :) Likewise, the "book" colors like
red book for an audio CD were chosen simply because
those were the folder cover colors the original
copies of the finalized specifications were bound in.
ISO stands for International Standards Organization.
The ISO members from all over the world work together
to create technology standards so that different
computers can communicate and share things like
CD-ROMs and floppy disks. See http://www.iso.org
