I've got 2 PCI Macs with G3 Slot cards that run 8.1 fine.

My 7100 will run 7.6 w/o complaints with the Sonnet card. It's normally booted in 8.6 but I still have 8.1 and 7.6 on separate partitions and they all play nice with the Sonnet card.

My PowerBook will still boot 8.1 with a G4/500 in it, and eons ago my Mac SE would still boot systems as ancient as System 1.1 with an Applied Engineering '030 card.

I'd imagine things would be different for, say, a IIci that had a PowerPC card in it (I kinda doubt that System 6.0.8 and a PPC accelerator would've been real happy with each other) but usually it's the other hardware that makes a given Mac incompatible with an older OS, since instruction sets most often get added to, not subtracted from.
