Steve,
Unless someone has applied varnish to the cabinets, they have an oil
finish.  Airstream used Watco brand oil, but any good danish or tung oil
will do.  All the cabinets should get a reapplication every 5 years or
so to keep that great wood look without the glossy buildup full strength
varnish or polyurethane would give.
