I own a '65 convertible, but I bought it in good shape
and have not had to do anything to the floor pans.
However, I did buy the Bug Me Video for replacing
floor pans.  The video shows them removing the body
from a sedan and removing/replacing the floor pans.
They also remove/replace the floor pans on a convertible,
but do it with the body still attached.  I believe they mentioned
that it was more difficult to do the body off with the convertible.
I would say that if you remove the convertible body, you should
do more bracing than you would for a sedan.  The sedan's top
provides a lot of structural support.
