Plug your phone into your computer and on the device tab, check the Music tab. Then, find where it says "sync music" uncheck that. You may get a warning about deleting music from your phone, but since that is what you want, then say OK. Sync your phone. All the music will be removed from your phone.
Now, after the sync your entire library should be a checkbox to sync selected playlists, artists and genres. Check that. Then, you will have to go through the entire list and check the ones you want to sync to your phone.
