Airplay connectivity uses wifi exclusively. Bluetooth connectivity uses bluetooth exclusively. While they are somewhat related, they are different in terms of technology and how they work. One obvious difference is bluetooth has a shorter range compared to wifi. Another difference is audio transmitted over wifi is more responsive than audio transmitted over bluetooth. At least that's been my experience after listening to audio from my bluetooth headphones compared to listening to audio transmitted over wifi.
