Hello James, The dilemma you face stems from the fact that Apple never intended iPod to be a stand-alone device capable of managing its own content. As a result, currently, to my knowledge, one cannot force iTunes to accept the media structure and/or content from an iOS device.
This means that you will need to import the media content and perhaps even its structure using a third-party application. Now, I don't know if you're using Windows or the Mac but if you're using the Mac, I highly recommend a VoiceOver accessible product called Senuti. Senuti is simply iTunes spelled backwards. This is not a free application but it is well worth the money, in my opinion. If you are a Windows user, perhaps someone else can make a good recommendation as I have yet to find a Windows application that I would recommend.
