Hi,

Raul's suggestion is probably the best you'll get, but if you don't
want to be dependent on some form of voice activation technology,
there is an app called activator that lets you set events to happen
based on actions - E.G. volume down & up at the same time can be
configured to open an app of your choice.
I have this set to toggle vo since my home button isn't great; I also
use it to put the phone in airoplane mode by shaking it.

Probably best to give Raul's idea a go first, unless this really
sounds like what you want.
