How do these pair, ie, do you hold down the power button and volume up?

Hi tootle,

Buying from the Verizon store may be pricey. There are many less expensive options at Amazon dot com.

For example, the headset I describe below was bought at Radio Shack for $75. The exact same model is available at Amazon for $30.

I use the Samsung 3500 Blue tooth headset.
It works very well and still lets in enough sound to get around. There
is a loop to go around the ear included, which I use. It can be used
in either ear.
It also comes with stereo ear buds that plug into the headset for
music listening. These ear buds do enter the ear canal and have a
noise cancelling effect, so I do not use them when I need to hear
what's around me.

It works with most, but not all apps, I think I have come across two apps it does not work with.

Note, there is only an on / off switch, a call answer / end button and
two volume controls. It can not control the iPod.
If you buy this headset, the charging port, which is also where the stereo ear buds plug in, is on the end of the headset stick, under a small rubber cover. I spent an hour feeling around for it.
