Oh!.... Ok, you double tap and hold and when it says moving, slide finger about until it's on top of another app, one you'd like to hide with the one you're moving; then lift finger and it'll make the noise and ask you for a folder name, though it puts one in by default and you have to change it. But once done, you can go back to the main screen, dt&H to move something else and drop it on top of the new folder and it goes in there. I think there's a limit of 4/folder; but it is a good start.
