I think there would be a way to address some of this. Not having seen the app I 
will offer a few thoughts. First contact the developer and you can find the 
link by looking at the support link in iTunes. COnsider what the accessibility 
issues are. For example, are their unlabeled buttons. If so that can be easily 
addressed. Is turning VoiceOver off a problem. If so that is also possible to 
address and looking at apps such as Garage Band is an example of an app where 
you can touch a key on the keyboard and it immediately plays and Thumb  Jam is 
another app that takes advantage of this option as well.
There are a number of links available from the AppleVis website, 
http://www.applevis.com and if you can provide a link that will take the 
developer directly to those resources would be very helpful as well. I hope 
this will help get you started.
