Okay, I just tried it on my phone and here is what I did. Open iBooks and if you aren't in the library view double tap the library button in the upper left of the screen.
Once there, verify that the book you want to delete is on the screen. Double tap the edit button. Touch the title of the book you want to delete and you should hear a message (if you have hints on) that says something like double tap to select the book then choose move or delete.
