Hi james. I'm a long time window-eyes user myself. Sonsidering that the two systems are very different from one another, access on the mac is better over all than access on a pc with window-eyes. Window-eyes has been allowed to stagnate, where-as voiceover has received major upgrades every 18 months for the past 5 years. Email, web browsing, and managing of appointments and contacts are all much friendlier on the mac than on the pc. Advanced word processing is a bit lackluster. Ocr is expensive and ineficient but working. No system is perfect, but i'm using a mac to keep track of my business and in all other respects it has completely replaced my pc.
I think the mac mini would be a good bet for you. Maybe add a small 4 chanel surface controller such as an alesis multi-mix. Hope this helps.
