Personally, I think this is a bug with iOS 5.1. Try going into sounds in settings, and swiping the volume down and back up to what you wanted to be and then exiting, you should find things come back to normal. It hasn't happened to me for a while, but sometimes it did after I had been in an audio program, such as audible, or wants voice-over had died. Don't know what it is, and I think it might only be me who experiences it. But give that a try. Hope it works.
