The only problem with using it as a plain text file all the time is that you'll lose formatting. Markdown can render your formatting just fine, but that means you'd have to save a blank copy of the invoice, duplicate it, modify the duplicate with the details you need, export that copy as Word or Rich text, then you're all set.
