Hi, You can use iCloud backup regardless of the OS your computer is using as the phone takes care of it all. If you were using it, setup of the new phone would be as simple as connecting it to your wireless network, signing in with your Apple ID, choosing restore from backup then relaxing as all of your apps, settings etc get transfered to the new phone. Definitely consider using iCloud when you set the 6 up.
Failing that, doing an encrypted backup of the 5 in iTunes then restoring the 6 using said backup will work. Cheers, Ben.
