There is a native app on the iPhone called Voice Memo. At least it is on the IPhone 5. It is very easy to use. There are many many other recorders out there that are accessible. Some record in compressed quality, some record in .wav or uncompressed audio. Many have easy ways of sending a file via email, dropbox, etc.
