At least with JAWS betas, you can have other versions of JAWS on your computer. 
If you test iOS, likely it will be the only version available on your device, 
and I don't know if it can be rolled back to the original release. Do know, 
however, that there has been Alpha testing and likely in-house beta testing 
before an Apple beta is released. This does not mean it will not have bugs, but 
it does mean that the biggest problems have been solved. And then there is 
VoiceOver. Even if all else works on the device and VoiceOver has trouble 
presenting what is there, you are simply stuck. My point is here that people do 
this all the time, but there are things you have to keep in mind. If you're 
using your device as your main device, don't necessarily assume that the first 
beta out the door will make it possible for you to use it in this manner 
without problems. Having said that, it could work very well. There is just no 
way to know unless you try it.

Betas are not for everyone. If you are not technically minded or do not want to 
walk on the wildside, then betas should be avoided. When a new beta comes out 
for JAWS, I almost always will read through what's new and what has been fixed, 
but I never download any JAWS betas anymore since betas as a rule are 
unpredictable. And, since it is not a full release, the company offers no tech 
support for those brave or ambitious enough to test the beta. Certainly they 
are a great way to get the developer's feedback, but realize that betas are 
betas because the software is being tested and may not work perfectly all of 
the time.
