When you create a folder, you can double tap on the name and rename it to whatever you want. If it's an already existing folder, navigate to the folder on your home screen and double tap and hold. Then, when it says moving folder, double tap again and a text field will come up allowing you to edit the folder name. I know that this is the process by which you delete apps, but when you do this to folders, it allows you to rename them.
