OK, so this may already be known to the whole world, but it's new to me as of today. Just passing it on in case there's someone else out there who didn't know.
Press and hold the Home button, speak the phone number, and Siri will dial it. Until now, I've been entering the phone numbers directly via the keypad, if the number wasn't already listed in my Contacts.
