Make sure you don't have orientation locked. Launch the calculator and turn the phone on its side. It has been over 40 years since I had to do trig, algebra, etc., but it looks pretty complete. I'm not sure it will have variables, but you can find that out by experimenting. It is not programmable as far as I can tell.
If you need a programmable calculator, there are a lot in the app store. A quick search turned this one up and since there is an Email address for support at the end of the description, you could inquire as to whether they know if it is VoiceOver compatible. If not, you could ask for a promo code to test it out for them and if it is, great! If not, then you might be able to convince them to make it compatible.
