This is how I copy the text of an email: After putting the focus of voice over in the body of the email, just double tap and hold. After you hear the sound, release your finger, and you will hear a pop sound and a little menu will appear. Just flick up or down to cycle through the choices. You would first want to double tap on select all, to select the text of the email. Then flick up or down until you hear copy, and double tap to copy the email to the clipboard. Now you are ready to go to the other app and paste in your email.
