I use one of these:

It's a little box that is meant for if you're plugging something into a tv that 
doesn't give you the other inputs you need. With this box, you get RCA outputs, 
so I just ran a patch cord into my audio mixer. If you just get an HDMI cable, 
plug that from the Apple TV into this box, you're good to go with RCA outputs. 
This cost about $25, and the two cords you'll need won't cost but a few 
ddollars more.
