To open an attachment, you double tap the attachment, and it will have that open with dialogue. Open it in in the appropriate app, then save it from within that app.
To create a contact from an email, find the back button in the top left of the screen, then one-finger swipe right until you get to the address button. Double tap this, and create new contact, or add to existing contact will be two of the choices.
