Hi Kimber. I place and hold my finger on the folder I want to rename. VoiceOver will say, "moving (name of folder)". I then do a single double-tap on the folder to open it. The folder opens and VoiceOver says, "(name of folder) is editing. Double-tap to edit". I then do a single finger double-tap to open the text box and rename my folder. Hope this helps.
