I don't know of a way to back up just your Voice Dream data. I know when
I've changed phones and restored an encrypted iTunes backup to my new device
that all my Voice Dream books were restored. I did have to re-download my
purchased Voice Dream voices, however.

Good luck and we'll keep our fingers crossed that your problem does not
persist.
