Yep, that's been my experience in Canada as well. Even the newer machines that have gone to touchscreen interfaces still have the headphone jack.
My only complaint is that the volume is initially very low. That would definitely give some people problems.

I don't think there is an ATM that would use Apple Pay out there, but it is a good idea we should suggest to Apple some how. I don't see why it couldn't be technically done except for the fact that ATM's need a pin. I do primarily get my money out of them though when I do need cash.
