Are you using the pinch gesture to select the text first? Set the roter to lines first, and you'll be able to select larger blocks of text. Once the text is selected, you'll have a copy option in your roter which will copy the selected text to the paste board. If the text is short, after VoiceOver reads it, a three finger quadruple tap will copy whatever VoiceOver read to the paste board. You may also have a select all or copy all option in your roter.
