I upgraded my wife's iPod Touch fifth gen last night and noticed a "Passcode 
options" button. We only use the iPod Touch at home a bit so we didn't have a 
passcode set and when I went into the Passcode Options I was able to skip 
setting a passcode there.
When I upgraded my 5S and my wife's iPhone 6 I never noticed this either and 
just put in our usual 4-digit passcodes.
After reading about this I went into Touch Id and Passcodes on my 5S and the 
old option to turn off simple passcode is now gone. Instead if you want to make 
any changes to your passcode, you select to "Change Passcode". This will prompt 
you to enter your old 4-digit passcode. Once you do that, it now asks for a 
6-digit passcode, but you also have this "Passcode Options" button.
If you double tap on it, you now have the following choices:

Custom Alphanumeric code
Custom numeric code
4-digit numeric code
Cancel

So, here you can continue to use a 4-digit code, you can set a custom code 
which includes letters and numbers or you can set a custom numeric code which 
could be of custom length, e.g. 5, 6, 7 digits etc. I did not try to find the 
information on Google as to how short or how long it can be, but I tried it 
with 5 digits and it worked fine. The disadvantage is that if you do enter it, 
you have to tap on OK or Done depending on where you are since iOS does not 
automatically recognize that you have finished entering it after you put in the 
last digit. Not sure why this is the case, they could certainly set it up so it 
knows you entered a 5 digit passcode and once you enter the fifth digit it 
would automatically submit it. This is how it works with the new PIN you can 
set up to sign in to Windows 10, you set it up the first time and make it 
whatever length you want, then once you enter it it will submit automatically 
after you enter the last number of whatever length you chose to make it.
If you continue with a 4-digit code or set a new 6-digit code (this is now the 
default if you tap on the Change Passcode button) then as always your entry is 
submitted after you enter the forth or sixth digit.
I actually think going to a 6-digit code is a good idea, quite a bit ore secure 
than a 4-digit code and not a lot more difficult to enter and most of the time 
you can use Touch Id.
Once you change your passcode you also have the option to make this your new 
keychain security code or you can keep whichever keychain security code you 
were using before. Just make sure you remember if you make them not the same.

I can't find it now, but on my iPhone 4S, I did find the option to set a
6 digit passcode. I'm sure it's in an obvious place, but I didn't see it now in 
Settings -> Passcode. Even though I wasn't asked to change it when I upgraded 
on my iPhone 4S or iPhone 5, and I'm still using my four digit passcodes on 
these phones, apparently you can change it.
