This is an excellent question.

There are two ways to rename your iOS device while it is connected to iTunes 
12.x:

Just so you know, I just renamed my iPhone using iTunes 12.3 for Windows.

The first way is to click on the name of your device in the iTunes 12 summary 
view.  This will open an edit field in which you can type in any name you like. 
 The name of the device is just to the right of the photo which is located in 
the upper left corner of the display.   Please keep in mind that I am using the 
ZoomText screen magnifier on this particular computer.  Thus, I have not 
performed this action using a screen reader such as Jaws for Windows.

The second way is to simply rename the device, on the device itself, while it 
is attached to iTunes.  Doing so will immediately change the name of the device 
in the iTunes Summary view.

Hello list,
So for the longest I’ve stayed on iTunes 11, but recently updated to the latest 
software version. Needless to say, it’s been… a transition.
Anyway, the one thing I can’t seem to figure out is how to go about changing a 
device’s name. I recently got my wife to give up her old 4S for a 5C and wanted 
to rename the 4S to something else, but for the life of me, I can’t find out 
where. 
With the older versions of iTunes, you could bring that option up with the 
context menu/applications key (Windows) when on the device’s name in the 
listview and select the rename device option and presto, but apparently not 
with iTunes 12.3.
Can anyone point me to the right direction?
