I found this freezing after replying to a text very annoying as well. What
seems to work for me on my 6S is not to type into the text box if it is
already selected and blinking when I open the text. I have been going to the
app switcher closing messages and then re-opening it. If I physically
select the text box I can then type and send my reply without the Voice Over
freezing.
At least this has worked for the last 24 hours!
