Update: thanks to Twitter, I got it working. I was expecting a process that 
would be the inverse of "transfer purchases", but the solution was simply to 
sync all audio books. This had the added advantage of backing my newly 
purchased audio book up to my Mac even as it put my previously purchased books 
on my new phone.
