I won't get into the POP versus IMAP debate or the IMAP versus Exchange
debate or the GMail versus Outlook debate, but be assured there's a
place in today's world for all of this so don't feel pressured to use
one protocol or service over another. Listen to the pros and cons of
each and then make your own decision.
On the statements below about the use of labels in Gmail, I've never
seen an email client where this doesn't look and behave exactly like it
would if you were just using folders on Gmail. Labels are just the
mechanism that Gmail uses to track information about your email, and it
does provide some efficiencies. For example, if you copy a message from
one folder to another, you don't actually have two copies of that
message on your email server. You still have just the one message with
two different labels associated with it. I'd actually be surprised if
Microsoft wasn't using the same design on their servers.
There's also no such thing as an All Mail label. When you look at the
all mail folder in your email client or the all mail view on the Gmail
web site, you're just looking at any message on your email server
regardless of what labels it has associated with it. This comes in handy
when you moved a message to a folder and can't remember what folder that
might have been. BTW, when you move a message into the trash folder,
it'll be removed from the server after 30 days, so it'll also stop
shewing up in your All Mail folder.

its limitations.
I know you can still configure your gmail account to use POP, not sure if you
can even set up an Outlook.com account as a POP account and, of course, why
would you. Exchange active sync beautifully syncs your email and contacts and,
if you want, calendars and reminders, and while it has a few limitations for
the most part it's a pretty nice experience. All you do is set up your account
whether it's on the PC or your iOS device(s) and all your email and your
contacts are there.
I'm sure gmail when set up with IMAP works well and maybe if I had spend as
much time with it as I have with Outlook.com I'd like it better, but I just
prefer the ability to make folders and move messages into those over gmail's
way of applying labels to organize my email. I also don't like the approach of
the All Mail label or whatever it is called where messages still are kept even
if you delete them from your Inbox and, I think, also your Trash folder.

to Hotmail 6 years ago that I ended up deciding on Hotmail which then became
Windows Live and now finally has evolved into Outlook.com. I do have a gmail
account which I never really use for anything except as an account to log into
Google services like Youtube, but I read about people having issues with gmail
so often and rarely hear anything about people having problems with their
Outlook.com/Exchange Active Sync setup.
