The iPhone battery charging technology is very intelligent. If you leave the iPhone plugged in for a prolonged period, it will trickle charge to avoid any damage to the battery. A lot of people think that it's necessary to let the battery run down and fully charge again on a regular basis, and while it's a good idea to do that from time to time to calibrate the battery, you don't have the memory effect that used to be common in older battery technologies.
So as a rule, the best idea is not to let the phone fully discharge on a regular basis if you can. And the trickle charging technology means it really won't hurt if you leave it plugged in for some time.
