To except a suggestion, just double-tap it. Otherwise, just keep typing and ignore them entirely, and they will be replaced with new suggestions when you add more letters to the word, or start a new word. I like this feature, and for the most part, find it saves me a few seconds. It's pretty good at figuring out small words, like the, and, etc. if you want to review how the suggestion is spelled, and you don't own a Braille display, just turn your rotor to characters, and flick down to spell the word. Then you can keep typing and ignore the suggestion, or double-tap to except it.
