Everything you say is right and correct. I got my 4S in late 2012. after using Nokia for seven years or so. I had issues with adjusting to touch screen technology but after a week or two everything set in its place. In the mid of 2013. my girlfriend bought iPhone 5 and she was crazy for the first two weeks, she almost crashed it against the wall. After some convincing and training some weeks after she said: 'I could never go back to Nokia'.
It takes some learning curve to achieve some level of confidence and when you do that the most common every day usage comes to four-way flicking with one finger, single and double tapping with one or two fingers and accasional flicking with three fingers. Everything else is used from time to time.

When I bought my iPhone 5 in 2012, I was provided a one hour tutorial
on voiceOver on at Apple store when I told them that this was my first
cell phone ever.  After the tutorial, I realized how many fundamentals
I needed to learn and to become accustomed to using a touch screen
interface.  Even though the trainer at the Apple store was sighted, he
was as proficient at voiceOver as experienced blind foiceOver users.
It took me two to three months of practice to become comfortable
navigating the iPhone's touch screen interface.  this is something
that doesn't come through teaching but through practice.

If you reside in the United States (which I think you do given that
you brought up taking classes at the Verizon store), you may want to
check out the classes offered by your local Braille Institute. This
place may have a program called Connection Point or some other name
which trains students on technology such as the iPhone.
Contacting your local Apple store to see if someone there has
knowledge of VoiceOver, asking questions on list  or listening to
podcasts on AppleVis are also good alternatives.
Good luck on getting trained with the accessibility features on iPhone.
