Not entirely true, you can get converters which plug into the Apple TV's HDMI output and when then have also an HDMI output to connect to a TV, but there is also an audio output and the converter extracts the audio from the HDMI signal and send it to the audio output on the converter. You can then connect it to a stereo. I can't remember, however, if this converter I saw (there are of course a bunch of them out there) had an optical audio out or an analogue/RCA output. I guess if it's optical and your stereo can't take that you'd need another converter to convert the extracted digital ptical signal to an analogue signal. At that point you probably sepend a fair bit on converters and the quality may not be the best any more.
I heard (have not tried it myself yet) that the Apple TV can connect to a Bluetooth headset or speaker, why not use a Bluetooth 3.5mm dongle which you can connect to your stereo and then you can just stream your Apple TV to the stereo via Bluetooth.
