Hi Terri, This page is very customizable. Touch the status bar and swipe down with three fingers. Swipe right to switch to Today view. There's an Edit button near the bottom. Double-tap that, and then you can delete, add, and reorder the widgets.
As for the apps you're seeing, there's a section called Siri Suggestions that lists apps you use frequently, to make them easier to find an open. I hope that helps.
