Rebecca, One of the cool feature I have found that is quite simple to use when you find yourself in the spot you are describing. What I do is just do a triple fingers double tap. This will silence the Voice Over but not disable it. Thus allows you to double tap the record without Voice Over rudely speaking when you don't want her to talk! ;)
Once you are done. Just use the triple fingers double tap again to turn the Voice Over voice back on. Hope that helps.
