How long have you had your iPhone 6? I was having this same problem with my iPhone 6. I handed my iPhone to a sighted friend so they could delete some photos of screen shots I had accidently taken & photos that had been saved to my camera roll from an app. I had several pixils that had burned out on my screen. Hence the iPhone not responding properly when I would tap on an app to open it. This may be your problem as well. On the occasions when I would tap to open the app I wasn't tapping directly on the area where the app was located on the screen. Voiceover's focus was on the app & my tapping not directly on the app where the burned out pixils were would open the app. Had to send my iPhone off to have the screen fixed. Have a sighted person look at your screen to see if this may be the case. Make sure the screen curtain is off.
