You can still read emails separately, just flick down when you are on the main message of a thread until you come to where it says "Expand", then double tap and the thread expands and you can read each email, delete it and so on. I am not beta testing right now but I am prety sure Apple is aware that the 2-finger flick up doesn't start reading the message body any more and from the way it sounds they will bring this back. I tried the Outlook app for a while and while it is also a nice app, I really am used to use the scrub gesture to back out of messages and also out of a particular mailbox back to my list of mailboxes and in Outlook you can't do this, if I want to get out of my Outlook.com account, for example, so I can open my work account I have to tap on the Close button at the top left. It's a minor thing, but it's one of these little things which for me are annoying.
