Back in ITunes 7, Apple introduced an extra field called "Album Artist" to handle this situation. In iTunes, select all the tracks in the album, which would include tracks by both James Taylor and also James Taylor & Carole King in the example that Richard gave. Do a "Get Info" with the appropriate short cut keys (Command-I on the Mac, or Control-I in Windows). Then enter the main artist's name in the "Album Artist" text field (e.g., "James Taylor" in the example Richard gave). iTunes will treat the value entered into the "Album Artist" field as the artist's name for the purposes of organization and syncing, but will retain all the individual track artist information.
