I've twice given away, or maybe sold for a nominal amount, one of
my iPhones to a family member. And, before giving them the
phone, I would sign out of iCloud and erase all content and
settings, thus allowing them to set up the phone as a new device
with their own Apple ID. Yet, for some reason, when each person
tried to use Siri, although Siri could be used without a problem,
Siri would refer to them by my name and not by their own. They
were able to go into the Siri settings to fix this, but I'm still
surprised this happened in the first place. True, I didn't turn
off Siri before giving the phones away, but neither was I advised
to do so per Apple's instructions when selling or giving away an
iPhone.
